These knives undergo heat treatment and ice hardening to achieve an impressive 63 Rockwell hardness rating (HRC), surpassing VG10, AUS10, and similar stainless steels in edge retention. Featuring a stainless clad 3-layer construction to safeguard the SG2 cutting core and enhance corrosion resistance, the stunning tsuchime ("hammered") blade finish promotes food release, while the hand-sharpened, highly polished edge ensures razor sharpness from the outset. The edge serrations are designed to maintain sharpness, slice effortlessly, and effortlessly cut through tough crusts and exteriors.
The fully contoured handle, crafted from resin-infused wood fibers for durability and comfort, incorporates a stainless steel bolster for balance, adorned with a traditional Japanese mosaic pin and an embossed Yaxell kanji logo at the end. Handcrafted in Seki, Japan, these knives come with a limited lifetime warranty, featuring a 9" blade length, 1-1/4" blade height, 14-3/8" overall length, weighing 6.7 oz.
